Place the Rainbow Congee - Chicken, water and chicken into a pot. Bring to a boil and then lower the heat and let it gently simmer until the chicken is fully cooked, about 25-30 minutes. Keep the porridge simmering until it is softened.
Remove the chicken and leave to cool. Shred the chicken and remove the bones. Mix the shredded chicken back into the congee and turn off the heat. Cover the congee for 5 mins before serving.
Garnish with scallion, sesame oil and ground white pepper
